Chef Grant Achatz of Alinea in Chicago and Chef Daniel Humm of Eleven Madison Park in New York City are doing something that no photographer would ever do with their studios…they are switching restaurants! They cooked up this idea when Achatz's The Aviary hosted Humm's cookbook party last November. While they will lose money at a whopping $495 cover, they are doing this for the love of the sport, so to speak. One can only imagine the logistics involved in relocating staff and learning new dishes in a crash course period at this caliber.
